Ian Scarramuzza head chef from London’s 2-Michelin starred Restaurant Hibiscus in Mayfair, where Ian works under Claude Bosi the chef patron. Ian was formerly sous chef at 2-Michelin starred Restaurant Andrew Fairlie at Gleneagles hotel in Perthshire

Ian creates three current menu dishes in this video. To start:

Native lobster, cucumber, and pink purslane, black pepper sauce.

A main course of:

Roast Cornish cod, Jersey royals, seaweed and mustard purée,
dashi and sea beet oil.

Dessert
Mango curd, mango salad, iced yoghurt and olive oil
